What the Evidence Shows

The carnivore diet—consisting exclusively of animal products (meat, fish, eggs, some dairy)—has gained attention in online communities for reportedly improving autoimmune conditions including rheumatoid arthritis, psoriasis, inflammatory bowel disease, and Hashimoto's thyroiditis. The theoretical mechanism involves eliminating plant compounds that may trigger immune responses in susceptible individuals: lectins, oxalates, phytates, saponins, and various plant proteins. By removing all plant matter, the diet functions as an extreme elimination protocol. A large self-reported survey (n=2,029) by Harvard researchers found that participants reported high satisfaction and improvement in various conditions, but this data is severely limited by self-selection bias, lack of controls, placebo effects, and absence of objective biomarker validation. Individual case reports and clinical anecdotes describe dramatic improvements, but these cannot establish causality.
