What the Evidence Shows
The carnivore diet (consuming only animal products) has gained popularity through social media testimonials claiming dramatic reductions in autoimmune symptoms, joint pain, and inflammatory markers. Proponents theorize that eliminating plant compounds (lectins, oxalates, phytates) removes dietary triggers of inflammation. The largest evidence base is a 2021 survey of 2,029 self-selected carnivore dieters who reported improvements in various health conditions. However, this study had no control group, relied on self-report, and suffered from extreme selection bias (only satisfied dieters responded). No randomized controlled trials have compared a carnivore diet to other diets for inflammatory markers. Mechanistically, the diet eliminates many known anti-inflammatory foods (fiber, polyphenols, diverse plant compounds) while increasing saturated fat and heme ironβboth associated with pro-inflammatory pathways in controlled studies. Some individuals with specific food sensitivities may benefit from the elimination aspect, but this does not validate an all-meat approach as broadly anti-inflammatory.
