What the Evidence Shows
The relationship between red meat and heart disease depends heavily on processing. Processed meats like bacon, sausages, and deli meats contain high sodium and preservatives that consistently associate with higher cardiovascular risk. For unprocessed red meat (steak, ground beef, roasts), the picture is muddier. Large observational studies find modest associations with heart disease, but these are confounded by overall dietary patterns and lifestyle factors. A controversial 2019 analysis concluded the evidence was too weak to recommend reducing red meat intake, sparking significant debate. The TMAO pathway (trimethylamine N-oxide produced from carnitine in red meat) is one proposed mechanism, but its clinical significance remains debated.
